I'm new to VMWare. I have 4 1TB hard drives in a RAID 5 array. I have 3 servers that i want to convert to VMs. two of them are ~350GB and one is 250GB. VM says that i only have 744GB total diskspace out of 3TB. and it only lets me create a 256GB VM. Do i need to create 2 or 3 logical Raid drives and have 1 VM per drive?

You need to create multiple smaller LUN as vmfs limit is only 2TB
Create 2TB LUN & 1TB LUN and format both with 8MB vmfs block size, you can then create VM virtual disk up to 2TB in size
