Server Software Not Genuine

I hired an IT guy to get my systems installed.  Turns out, all of a sudden when I log into the server it says "This version of Windows Server 2008 is not Genuine".
  Ready for this?  This IT guy is now in jail!
 
 I paid this guy for the software and everything, but he had everything.  If I go buy a retail copy or something, can I add the new "legitimate" license key on the existing installation or am I going to have to hire someone to start all over again?

 I've been running this server for about 7 months now so I don't even know what software or features are installed.
