BPS Migration To BES Express

As discussed in another thread, the is a process for migration from BPS to BES express, it involves bring both up at the same time, removeing the user from the BPS and wiping the handheld, then adding the user to the BES express. In my situation this move to BES expressed was forced becasue of a trasition to exchange 2010 which is not supported on BPS. So, my question is, in my current setup I have a 2007 server with all the mailboxes etc on it, I have brought up the 2010 server but not moved any mailboxes over. My BPS talks to the 2007 server. My plan now is to install a BES Express on another server, not the 2010 server, and then one by one deactivate the device on BPS, wipe the handheld, transfer the users mailbox to 2010 and then activate the bberry on the BES Express server. My concern is how does the bberry know which BBery server to talk to (BES Express or the old BPS)
