multiple project question

Quick questions on Microsoft Project: I have several projects to track, can I specify each project as a task (or is Microsoft Project can only be used to track one project?)? When a person is in multiple project, it will have this warning in resource sheet:"This resource should be leveled based on a day to day setting". What is this message? So I assume in this case, a person can not be scheduled for two projects on the same day? How to resolve this if a person needs to work on multiple projects at the same time?
