Swing-it (http://www.sbsmigration.com/) is a good tool for this. I have used it for SBS 2000 to SBS 2003 and it worked very well. It has been updated to go to SBS 2008 (but I have not done that one yet).

Just try doing that sometimes in test lab BEFORE play in your work server. You have only one shot.

With Swing-It, you move stuff to a middle machine (spelled out in the documentation) and if you need to change things, you do have some latitude. You need time in this case, but it is still nice to have the latitude.
