Is it possible to stop SQL Server before installing SQL Express?  (just to make sure a rollback could happen if something goes wrong)

If you prefer that way, then your SQL Express instance installation should be done as a named instance.
Difference being Default instance would be referred as Servername and named instance would be servername\instancename.
Then you need to change the servername in all the applications that uses your database.
