Find out who deleted a mail message

Situation: Exchange 2007. A user mailbox and 5 people who have full mailbox rights on that user mailbox.

Problem: Someone has deleted an incoming mail.

Question: I see when it has been read, but not when it was deleted, nor by which person. Is there a way I can see who has deleted the mail in some way? Is there a way I can enable some logging to see this in the future?
