Exchange Cross Org Mailbox Migration from Exchange 2007 to 2010

I wish to do a cross org migration of exchange mailboxes. The source forest is on exchange 2007. But rather than doing a cross org from exchange 2007 to 2007 and then upgrading to 2010, I'd rather just do direct exchange 2007 directly to 2010.

1) Can it be done?
2) How?

I wear a lot of hats - Developer, Database Administrator, Help Desk, etc., so I know a lot of things but not a lot about one thing. Experts Exchange gives me answers from people who do know a lot about one thing, in a easy to use platform." -Todd S.

As a quick followup, it sounds like a simpler method would be to just temporarily introduce an exchange 2010 client access server into the 2007 forest and do the mailbox transfer that way. Would you agree?
Yes, but you still have to prepare mailboxes for move request.
In which way the client access server would help?
