go to the file /etc/mail/virtusertable
add a line
@mydomain-to-catch.com destinationmailboxname

then, run:
makemap hash /etc/mail/virtusertable < /etc/mail/virtusertable

This will activate a catch-all for all NON-existent mail addresses of the domain.

for the existing mail accounts, you will have to edit /etc/aliases in a way to send all existing names to your destination mailbox, and then activate this by running "newaliases".

Does this solve your issue?
