How To check the fragmentation on the hard drives in Windows server 2003 using system tools?

And how to defragment them?

Windows has its own defrag program under Accessories > System Tools. I highly recommend you stay away from third party tools - I've had a few drives totally rendered useless from third party apps.

Do you mean unattended?

The normal way is  right click on "My Computer" -> "Properties" -> "Tools" -> "Defragmentation"
