IIS In Server 2008 to host Multiple Websites off the single static IP

We are building a Web Server in Server 2008 with IIS and would like to host multiple websites on the one server.

IS IIS the right software to use or is there an alternative (XAMMP / APACHE??)

We have only one IP address from our ISP and we have read along the way that you can have one IP and host multiple websites and let the server do the resolving.

Any clues?
