So, the 2008 server is a VM right? You want to create another VHD then attach the VHD to the VM by going into the settings then add the VHD file to the VM.

Then you can add it to your existing vm via virtual machine settings, add hardware, disk controller and browse to the vhd, you would have to then go into diskmanagement (start > run > diskmgmt.msc) in your virtual vm (windows 2008) and initialize the disk (VHD), so it appears as a second partition or disk inside your vm.
