How do I create custom newform.aspx and editform.aspx forms for a Sharepoint 3.0 site

I updated a Sharepoint 2.0 site to a Sharepoint 3.0 site and, in the process, lost the use of the newform and editform forms that allowed users to enter data with explanatory text guides besides the questions. Now I am trying to figure out how to create custom data entry forms without getting a degree in ASP.NET programming. There appears to be nothing around that bridges the gap between expert knowledge and idiot knowledge in Sharepoint design.
