i have done it this way using the registry:

Outlook font settings are located in the HKEY_CURRENT_USER\Software\Microsoft\Office\11.0\Common\MailSettings key.

Set up a pc with the settings you want, export the registry key and merge it to other users via login script.  Alternatively, use the office profile wizard (http://office.microsoft.com/en-gb/assistance/HA011362881033.aspx) to take the settings from the pc you have setup and then distribute to other pc's.

Default stationery is stored here

Key: HKEY_CURRENT_USER\Software\Microsoft\Office\11.0\Common\MailSettings
Value name: NewStationery
Value type: REG_EXPAND_SZ
Value: example.htm (replace with your stationery settings)

Sorry the above info will allow you to change the default fonts, but this link will allow you to standardize Outlook.

Thanks for those solutions. However I am already aware of the reg settings etc. I need to stop the users being able to change them. Any ideas ?
