UTF-8 file to be transfer to one unix server to another unix server

  what mode can use to transfer file b/w unix servers if the file format is UTF-8.

If the character encoding is UTF-8 and you need to preserve it over FTP, then you should force a binary transfer.  If the server is a 'mounted' drive, then you shouldn't have to do anything special because that will be a binary transfer.

If the remote server supports ssh / scp just scp the file. This will preserve the contents along with the attributes and date / timestamp e.g.

scp -p  localfile  user@remote.computer:/some/path/
