Outlook 2003 Display Name

I am working on an SBS 2003 server with Outlook 2003. The emails of my users are going out as only first names as the names that appear in email clients. I changed what was in the "Display Name" field in Exchange to see if that would change what is displayed, but it's still just coming in as just the first name, when I send a test email.

If you have just changed the display names, then you will have to restart the Microsoft Exchange Information Store Service before emails will get sent out with the changes.
Stop and start the service and then send a test message to check the Display Name.
