I was wondering if it is possible to run a sort of group policy on a Windows CE device. The ones that we just got have games and office on them and that is not needed on our production floor. Any help is appreciated

Yes and no :)
A strict 'group policy' is not available but, depending on the brand and model of your device, it is possible to create an image for a specific use which is then loaded onto the machine.
This is a practice that is usually done by the suplier of your device, but that can be done yourself if you can get the right tools.
If you have a Motorola or SYmbol device, look for de 'integrator Guide' for your device and download the tools as described in that document.
I have no eperience with other brands in this.
Microsoft also makes the System Center Mobile Device Manager which is a purchased program to give you control over all of your devices, similar to Group Policy
