How do I exclude Outlook data from roaming profiles?

Points of my scenario:
1. I am admin of a Windows Server 2003 domain
2. Users have Windows XP Pro SP2 workstations and use Office 2003 Pro
3. Roaming profiles are implemented for all users
CHALLENGE: How can I exclude outlook files from being part of the roaming profile?
NOTE: Outlook folders are located in the following paths:
a. %USERPROFILE%\Local Settings\Application Data\Microsoft\Outlook
b. %USERPROFILE%\Application Data\Microsoft\Outlook

I would just create a simple GPO that Excludes the directories you have listed above. Do the following...
- Open GPMC (Group Policy Management Console)
- Under Group Policy Objects, create a new policy
- Give the policy a name, right click the new policy click Edit
- Go to User Configuration\Administrative Templates\System\User Profiles\
- Double click the Exculde directories in roaming profile
- Enable this policy
- Enter the path of the directoy you want below (you can add multiple directoires, just separate them with a semi-colon

That should be all you need to do.
