I am trying to find a direction to begin writing an iPhone app.

I have several podcasts on my server.  I do not want to post them on iTunes because some of the podcasts are private.  From the users iPhone; Is there a way to download the the podcast from my server into iTunes on their iPhone?

As far as i know, there is no way to download any music files directly from the internet to the iphone, at least not a way that apple allows. You can, however, stream the podcast to the phone.

OK.  If the user streams the podcast, would the user be able to RW, FF, and jump to other points in the audio?  For example: Pandora only allows the user to pause.

The last link shows a very simple way. In the comments you will find also:
MPMoviePlayerController *mediaPlayer = [[MPMoviePlayerController alloc] initWithContentURL:[NSURL URLWithString:contentURL]];
[mediaPlayer play];

If you never worked with the player on iPhone, it makes a sense to begin from:
