recipient policies in exchange server 2003/2008

hey guys, i have a question about exchange default recipient policies
we have 5 domains all hosted on same server, currently all 5 are i our default recipient policy. we will be deleting 98% of the users from 1 domain, and want to take that domain out of our default recipient policy. we dont want to stop mail flow from that domain, but just dont want all new users to have that email address by default. if we just untick the domain from that policy, will it effect mail flow? or just not create an email address with that domain for all new users?
i was told that someone tried unticking it before, but mailflow stopped and they dont want to untick it again.

If you uncheck the SMTP address in the recipient policy, then Exchange 2003 will no longer accept email for that domain. So you can't delete or uncheck the email address in the recipient policy.  There's no harm in leaving it there until you are ready to stop accepting email for that domain. When you finally do remove it, Exchange will automatically update all of the existing users by removing that address.

thats the thing, we still need it, but only for 5 people (not 105 people, like we have now)
is there anyway to stop making an email address for that domain by default when creating a user?
