SBS2008 Enable Shadow Copy on Exchange Partition

I have SBS2008.  I have Exchange data on a separate set of disks.

Should I enable shadow copies on this disk that holds Exchange Data?

You could. Databases are a difficult case as the information is so dynamic. Usually normal backup software uses VSS (shadow copies) to back up files however for databases it requires backup software plugins to work specific to the databases. Try googling about VSS and exchange database to see any relevant info. If you can't find anything let me know & I'll find some relevant info for you
My gut feeling is not to use VSS for Exchange or MSSQL data.  Leaving the backup to other backup methods.
