I have a server with SQL 2008.  It is currentyl running multiple apps.  I have another server that is running a legacy accounting app on SQL 2000.  I want to move this legacy app to new server but it does not run in SQL 2008

Is it possible to install SQL 2000 on same server as SQL 2008 so I can import the legacy database and run it?

Thank you

Yes you can. The only caveat is that only one of them may be the default instance.

That's ok right?  I just need 2000 to house the db so ODBC works from client and done!  Is there anything I should avoid when doing the install of 2000 so not to overwirte 2008 files?

As far as I recall, there are fewer components in 2000 than 2008 and all program files, com components go into different places.
