No, once you go to Exchange 2010 domain prep you can't go back.

In fact, I believe the setup even warns you of that?

You should be able to run Domain Prep for 2007 after you've done it for 2010. Domain prep only adds entries to the schema that allow Exchange to work properly. To be honest, there weren't enough schema changes from 2007 to 2010 for the two domain prep processes to be too different. As for undoing the domain prep, I'm not aware of a way for this to be done.
there should not be isues if you do that. however i am querious to know what is compelling you to do that
we might have a better way of coming out of  the situation you are in ..

if this server is the exchange server 2010 you are running you should get error ..
however if you run this command in another member server

however domainprep does not any schema changes, instead , after you run domainprep following is what you should notice:
You have a new global group in the Microsoft Exchange System Objects container called Exchange Install Domain Servers.
Note:  
To view the Microsoft Exchange System Objects container in Active Directory Users and Computers, on the View menu, click Advanced Features.  

The Exchange Install Domain Servers group is a member of the Exchange Servers USG in the root domain.

On each domain controller in a domain in which you will install Exchange 2010, the Exchange Servers USG has permissions on the Domain Controller Security Policy\Local Policies\User Rights Assignment\Manage Auditing and Security Log policy.

however if you run this command in another member server

i think it will fail.. if did not have 2007 earlier

I tried again on a test box just to be sure... It says once you run a domain prep for Exchange 2010, you cannot run a 2007 prep. So if youa re going to do this, try it in a test environment to be safe.
