If you log in to the account VMware you had to create to download ESXi you will find a serial number for ESXi under "My Account".
Copy this serial number then open up the vSphere client. Click on the "Administration" tab then "Licenced features". Enter your serial and ESXi is licenced for free.

BTW. The 60 day trial you currently have is for the full vSphere management suite. Once you have entered your free serial the management options will be limited to the vSphere client.

From memory when I got my free ESXi licence you could select how many processors it was for, not sure if that is still the case.

The 60 day trial is an Enterprise Plus Trial which is licenced per CPU. I haven't used the trial as Enterprise plus is way more than we are going to spend on VMware anytime soon.

You will be able to use all the hardware in your server with the free serial, we ran a dual quad core server on the free licence for a couple of years before buying an Essentials licence.
