i know how to change the Properties of the Touchup text tool, but since I always want 8pt font, it would be nice to have the default size set to 8pt instead of 12pt.

how do i change the default?

To my knowledge the TouchUp text will pick the font size of the selected text element as long as this is editable, ie it has the font information locally to make changes to the font.

For that reason I am pretty sure you cannot set a default.
