I can share with one just fine, but it will not work with multiple users.  With one, everything is working and I can invite another person into the chat, but shortly after that the original user will be dropped and the desktop share will freeze (I can't close it).

Follow the link, this is with SS. You will be able to do it easily by following this manual

It's not working, but I suspect it's because of our firewall setup.  We have three sites across the country and although two users can share a desktop without issue, adding a third causes the first user to drop from the conversation and then OCS hangs.

What are the relevant ports to open for this to work?

Make sure the policy is enabled and is selected to use default or specific policy or per user.
