Nice menus has always worked fine in IE 7 for me. Maybe your theme is bad?

when the output displays      all day, which is really confusing, how do i change all day to not available?

For the menus you may need to adjust Z-indexes

Are you using the event module? Check it's "issue queue" to see if anyone else has asked how to change the text "all day". This may be a job for String Overrides, http://drupal.org/project/stringoverrides
