I have a default install of Windows 2008 SBS server. The server has two partition's. one for the OS and the other is for the data. Where do I have to change in order that any new users I create using the SBS console that the users home folder is created on the Data partition instead of the OS partition?

You can change it in the SBS console , but you will need to move everyones, not just new users, open the Backup and Server storage, and on the right there is a "move users' shared data"
