Intra-Forest AD and Exchange Migration

We have
Windows 2003 Native AD with Exchange 2007 Server, single domain single forest.

We need to start build new domain, and planning to build into same forest so migration would be easier.

Any suggestions how to migrate Exchange and keep existence?  It will be slow migration, so we need mailflow between 2 exchagne orgs.
