I have Wireshark suitably positioned on our network.

Would someone please tell me what the specific filter strings should be to capture any audio or video streaming taking place on the network?

Thanks in advance.

For this you should find out which specific video/audio streaming your trying to capture and use those ports as to narrow you results. Here is a link to a list of well known ports.
