How can I completely uninstall IIS7 on Windows 2008 R2 server including current web sites..?

You can delete the role in the server manager and delete the features with it.
It should delete everything.

I will need this reinstalled and if doing just the role will it not bring back all the sites I had before removing the role?

I do not know for sure you can go after removing the role to the ISS folder and manueally delete the files.

Yes, if you just uninstall the role you would get the sites back this is why I state to delete them

So just delete them manually then after role deinstallation.
