How to reset the template/forms outlook 2010

My clients were using outlook 2003 and I just upgraded them to outlook 2010. One of the users has like a template for all new or reply emails (under html.) I know in outlook 2003 there was a way to just change it to none but i do not seem to find the same option in outlook 2010. My goal is that when she starts typing a new email or reply to an email it will only show a blank page and not a backgroud full of squares. How do I find the option to get rid of that background image?

Under File > Options > Mail > Stationery and Fonts, you can choose a stationery / background for each message, or leave it blank. At the top there is an option for "No Theme" -- make sure that is the selected choice.

That would have worked the problem is that we only upgraded outlook 2010 and if word 2010 is not installed then there are no themes (it is greyed out.)
I can't find the way to get rid of the template she has. I already unistalled outlook 2010, installed outlook 2003 again and set all the templates to none and then upgraded again and it remained in there. The problem about the template that she currently has it that is puts the signature and content in yellow ink and even if set the settings to write in black it puts it back to yellow.
