Depending on the function of servers there are various tools specific to certain roles, eg Jetstress for Exchange servers.  If you are looking for something more generic then you could look at benchmarking/stress test tools.  Prime95 is used for stress testing and is fairly popular for verifying system stability.  Inquisitor is a live bootable CD which performs various hardware tests.

Enable crashdumps if you want to check ongoing performance as these can be analysed after BSOD.  Use a tool like Prime95 if you want to test the hardware under load right now.
