is it possible to use text to speech on ibooks with i pod touch?

It is. Go to Settings/General/Accessibility and set the last option (triple click Home) to Toggle VoiceOver. Then launch iBooks, choose and open the book you want to read and when the page is showing, triple click the home button to activate voiceover. Slide two fingers across the screen from top to bottom and it will speak the page contents. You need the iPod with the latest iOS software for that.
