Force <td valign='middle'>

I would like to force one cell on my page to have the attributes of:

<td valign='middle'>

But the css is overriding it.

You need to add class to this cell and make specific css rule for it to override the default stylesheet.

Add class to the cell:
<td class="whatever">

And then add the following line to the stylesheet:

td.whatever {
  vertical-align: middle;
}

You can always override stylesheets with more specific declarations.
