Seeing as all remote agents are the same and the licensing is done on the media server, does anyone know if you need two hyper-v agent license keys if you have two host servers or if you can manage with just one?

If you have 2 Hyper-V hosts you want to back up, the licensing agreement dictates that you need 2 Agent for Hyper-V licenses.
The Hyper-V and VMware agents are licenses on a per-host basis.
