Exchange 2010 Maintenance

How do I clean up the logs in Exchange 2010?  The log directories are getting huge and I am afraid to just delete them.  Is there some kind of maintenance that I should be doing to keep this clean?

Which logs is this? If it's the logs for the databases, they will be comitted and deleted when you run a backup of the databases

Those are the logs I am speaking of.  Now I guess I should ask how do I back them up so the logs will be purged?
