I have a pre Apple TV purchase question.

I wanting to rip my entire DVD collection. I've already built a PC tower/server with a large RAID 5 array for redundancy. I have yet to RIP any of my DVD's cause I've yet to decide on a solution of streaming them to my TV. I want to check to see if I have my understanding of how the Apple TV works. If I have itunes up and running on the server and all the movies imported into itunes (via mp4) I can then share that itunes library out to the Apple TV, correct?

I did build this server with an HTPC setup in mind, with an HDMI port and a remote, but it's a large mini tower because of the 6 hard drives in it and would look really ugly setting next to my home theater. I could jam it between the back of the entertainment center and the wall but then I worry about air flow. Those drives get really hot.
From what I've seen the Roku doesn't support streaming of collections of media from a local server. Any suggestions?
