creating vpn connection with hyper-v host

Hello, I am hoping to implement a new server machine for our business. I have a legacy application that will not work with Microsoft Server 2008-64-bit, but I plan to run a virtual version of Windows Server 2003 Standard, 32-bit as a terminal server, and run another virtual machine (windows xp pro)  until my legacy application is updated to run with the new o.s.  My question is, can I create VPN connectivity to my network, and give access to the terminal server so my outside users can access the application remotely?  I plan on running one physical machine, with 2-gigabit ethernet adapters.  I have a virtual network created and sharing one adapter for the virtual machines.  How would I go about setting up vpn connectivity on the Host O.S?  Would I need a 3rd ethernet adapter?  Would I have to make my host o.s. the DHCP server?  
I am running a full version of the Server 2008 standard, NOT just the core.  Currently, neither server o.s.  is setup as a domain controller, just workgroup servers.  We do not run exchange or have sbs server of any sort setup and don't plan to.

You can also just have your firewall port forward TCP 3389 to your terminal server. That would allow you to connect to it directly using the RDP Client. It's not a best practice from a security perspective, But I haven't had problems doing it over the years. Make sure everyone has a strong password.
As kevingsieh said, you can open port 3389 for TS. Since you don't run Active Directory and can't install RRAS, I think it would make sense from security point to setup SSL VPN on your firewall/router. It will provide additional layer on top of 128bit encryption of RDP.
