The option is grayed out. Can anyone tell me how to enable this feature? I know it is not recommended but I need to use it the interim while I track down what is causing the exchange server to run as sluggish as it is.

Cached exchange mode in Outlook on Terminal Server is only available for Outlook 2010 and not for Outlook 2003 & 2007.
The fix that has been provided by Shreedhar wont work as when you deploy Outlook 2003 it will default take it as online mode as cryptic codes do not allow you to chnage the modes. Even when you make the chnages suggested by Shreedhar as per link, it will still not put outlook in Cached mode.

Outlook 2010 has capability to be installed in cached mode on Terminal Server.
