What does this mean grep -v ^s

I do not understand the meaning of this type of grep could someone explain

The -v option means display any lines *not* matching the pattern.

^s  means any line starting with the letter s

For if you had the file:

fours
fives
sixes
sevens

grep -v ^s file

would output

fours
fives
