Trace memory, handles, etc of an application on Windows Server 2008

I have an application for which I need to monitor data like memory, handles, etc which is usually displayed in task manager. How do I continuously record these values in background using Windows internal tools? My OS is Windows Server 2008. Please note that I need to do the monitoring only for the application and not the entire system.
