I know this scenario has been asked a few times on here already, but I'm hoping I can ask again and get more detailed information, specific to this occurance.  

We've been using nightly tape to backup our exchange server, and want to move away from that.  We have a fairly large capacity server in place for disk to disk backups via BE 12.5 from our Exchange server.  We are only sending less than 90GB of data from the Exchange box, and have 1TB carved out for Exchange on this backup destination.   This should give us the capacity to do full backups daily (if we wanted to) without filling that 1TB partition.  

On the destination server, we have a large tape drive that we would like to run once a week, just to extend out our data retention to say, 6 weeks total retention.  

So, in a nut shell, we send disk to disk backups to this destination device nightly and then once a week, burn a tape.

Here is where I need a little insight because I'm not very well versed in BE, and am somewhat green in data storage.  

I have the destination drive configured, the jobs are sending to the desination from Exchange just fine (error free).  In my initial turn up, I tried doing a complete (full) backup on Monday night, and then doing incremental backups for the rest of the week, thinking this would give me a catalog of the entire week, without needing to send a massive backup every single night.  Well, I'm only seeing the last 2 days are recoverable.  So, for example, on Friday I would only see Wed/Thurs as valid restore points.  So I need to change something there obviously.  Do I want to use the archive bit or last modified time for the incrementals?  Or should I look at differential backups after the full one?  I opted for the incremental thinking that it would be the best for this situation, but like I said, I'm green and may be overlooking something on this.

Secondly, the destination server has a copy of BE 12.5 on it as well to burn the weekly tapes.  What is the proper method to make sure that everything is fully cataloged so in the event I would need to restore from 2 weeks ago, I could put in the correct tape and recover the necessary data?

I hope I didn't make this more confusing that it should be, and greatly appreciate all help I can get.
