I am planning to  use  DSK2VHD.exe to P2V a production physical  Windows 2003 R2 SP2 with Quickbook 2011 to a VM on a hyper-v Windows 2008 Datacenter Server. Can experts confirm this is safe for production?

I have P2Ved dozens of Servers running LOB applications using SCVMM P2V. I have tested disk2vhd on test servers and had no issue. Both method use VSS so I guess it safe. Why not test it on a test machine, just to get the feel of it.
However, disk2vhd VSS normally is a non-distructive method, but there have been cases with the fix hal option. I would recommend using disk2vhd on a test server in order to get comfortable with it.
