Edit Subject Heading of IMAP message in Outlook 2003

We just installed a new phone system and the voice messaging is configured as an IMAP account in Outlook 2003.  My COO would like to be able to edit the subject heading of a voicemail to something meaningful and save it.  However, when you close the message and option to save it, we get the error "The Server responded:'Operation Not Supported'."

He insists he was told he'd be able to do this.  Any ideas?  I need to keep it as simple as possible, you know how COO's are about change.
