Audit Users and save logs

I have to start tracking user access, actions.

I want to monitor them on the domain (lan) and via remote desktop. What can I set up via GPO or something else to start tracking specific things.

Can we track deletions or copy command for data folders?

Do I need to enable something on the folder that contains the data?

You need to enable folder and file auditing this will give you an audit event for the events you want audited
