It is not officially supported, but it will work.  You may want to take a look at this blog post for some helpful tips: http://blogs.msdn.com/developingfordynamicsgp/archive/2009/09/02/windows-7-and-microsoft-dynamics-gp.aspx.  Also this KB article for 64-bit specifically: https://mbs2.microsoft.com/Knowledgebase/KBDisplay.aspx?scid=kb$en-us$918983&wa=wsignin1.0

My recommendations:
1. Install as THE local administrator
2. Make sure that you install SP 1 for .Net Framework 1.1 prior to installing any service packs(http://www.microsoft.com/downloads/details.aspx?FamilyID=a8f5654f-088e-40b2-bbdb-a83353618b38&DisplayLang=en)
