The vmware Virtual Memmory is not a direct allocation. You are basically setting the upper limit that the specific guest OS can use from the shared pool of physical memmory. Because the VMware has it's own memmory manager that sits between the guest OS and the physical host, you can over-subscribe (over allocate) your memmory allocations. In my experience we have been able to over-subscribe substantially. If you are running a cluster of hosts with v-motion then it's even better because v-motion will just move your SQL server to a new host if the memmory utilization becomes to great for the current host in regards to the available memmory pool.

In essence, there is no reason not to give it 8GB of memmory if it performes better that way or if your SQL server sizing indicates that you should be using 8GB of RAM.
