Do I need to define all subnets in my network if I need to create a second site

We are in the process of exploring an exchange deployment and as part of this we want to set up multiple AD sites. One as a DR site and the other as a production site.  I just want to make sure I understand the principles correctly.   We have one subnet in our DR site and multiple subnets in our production site.  All our domain controllers are in the same subnet but we have servers and workstations in other subnets.  Do I understand correctly that I only need to define 2 subnets in AD Sites and Services?  One for DR and the other where the DC's are.  As a follow up to that,  in the DR site we have servers in both the Test Domain and the production domain in the same subnet.  Will it cause an issue if I define the same subnet in both domains or do I need to create a separate subnet for Test and Prod in our DR site (physical)
