HP Proliant DL585 Server SCSI drives full

I have a proliant dl585 server running Server 2003 with four drives in it. The OS drives which are hardware mirrored and data drives that are mirrored. The data drives are full. I want to replace them with larger drives. Can I hot swap them out one at a time, or do I need to copy the data off, put new drives in and then put the data back.

What is the best procedure?

I have several times done the more risky method - which is not risky if you take a backup first - just time consuming.

First unplug one of the small drives and plug in a blank larger one.
Use Array Configuration Utility to check that it's rebuilding the mirror; if not tell it to.
When finished, replace the other small one and wait for mirroring to complete
Use ACU to extend the partition
Convert disk to dynamic in Windows and extend partition
